Kid Cupcake Recipes

These easy kid cupcake recipes are great for parties, potlucks or as a quick snack.

Making cupcakes is easy and fun. To decorate them you can use all sorts of different toppings like sprinkles, M&Ms, cherries, candies, coconut or anything else you can think of!

You can also use a simple ready-made frosting or you can easily make your own.

Easy Vanilla Cupcakes

Ingredients:

2 cups flour (sifted)
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup butter
1 cup sugar
2 eggs
1/2 cup milk
1 teaspoon vanilla extract

Directions:

Preheat oven to 375F. Line 24 muffin pans with cupcake paper liners. In a large bowl mix sifted flour, salt and baking powder.

In another bowl cream butter and sugar together until light and fluffy. Add beaten eggs, vanilla and milk. Mix well.

Fill cupcake liners 3/4 full. Bake approximately 20 minutes or until baked through. 

 

Double Chocolate Cupcakes

 

Ingredients:

 

2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups granulated sugar
1 cup butter or margarine (softened)
2 teaspoons vanilla extract
4 large eggs
1 cup milk
1 package (12 ounce) mini chocolate chips (divided in half)

 

For the Frosting:

 

2 1/2 cups sifted powder sugar
1/2 cup butter or margarine (softened)
1/4 cup milk
1 teaspoon vanilla extract
Remaining Chocolate Chips

 

Directions:

 

In a medium bowl mix flour, baking powder and salt in a small bowl and set aside. In a large bowl beat granulated sugar, butter and vanilla extract until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture and milk. Stir in half of the mini chocolate chips. Spoon batter into 24 paper-lined muffin cups, filling 3/4 full. Bake at 350F for approximately 20 minutes or until tops of cupcakes spring back when lightly pressed. Cool for 1 minute before removing from pan to cool completely. Frost (see recipe below).

 

Frosting:

 

Microwave remaining chocolate chips in a microwave-safe bowl for approximately 1 minute. Stir and microwave an additional 20 seconds until smooth. Keep repeating and stirring until chocolate is completely melted. In a small bowl beat powdered sugar, butter, milk, vanilla extract and the melted chocolate until creamy. Use to frost cupcakes.

 

Carnival Cupcakes

 

Ingredients:

 

1 package yellow cake mix
1 package vanilla pudding mix
2 tablespoons flour
1 cup milk
1/3 cup oil
4 eggs
1 1/4 cup mini M&Ms
1 container of frosting

 

Directions:

 

Preheat oven to 350F. Line two 12-cup muffin pans and one 6-cup pan with cupcake paper liners. In a large bowl, combine cake mix, pudding mix, flour, milk, oil and eggs. Beat with an electric mixer on low speed 30 seconds, then beat on medium speed 2 minutes, scraping down sides of bowl once or twice with a rubber spatula. Quickly fold in 2/3 cup M&M's and divide among muffin cups, filling just slightly more than half full. Sprinkle a few more candies on top of each. Bake 18 to 20 minutes, until cupcakes are fully risen and golden brown on top. Remove and let cool. Frost each cupcake with a little tablespoon frosting. Sprinkle remaining M&M's on top.

 

Easy Chocolate Chip Cupcakes

 

Ingredients:

 

1 package white cake mix
2 cups mini chocolate chips

 

Directions:

 

Line a cupcake pan with paper liners. Prepare cake mix according to instructions. Stir in chocolate chips. Fill cupcake liners 2/3 full and bake at 350F approximately 20 minutes or until baked through.

 

Cherry Cupcakes

 

Ingredients:

 

2 cups flour (sifted)
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup butter
1 cup sugar
2 eggs
1/4 cup milk
1 1/2 cups chopped glace cherries
1 teaspoon vanilla extract

 

Directions:

 

Preheat oven to 375F. Line 24 muffin pans with cupcake paper liners. In a large bowl mix sifted flour, salt and baking powder. In another bowl cream butter and sugar together until light and fluffy. Add beaten eggs, vanilla and milk. Mix well. Gently fold in one cup of the chopped cherries and fill cupcake liners 3/4 full. Top with remaining glace cherries. Bake approximately 20 minutes or until baked through.

 

Egg Free Chocolate Cupcakes

 

Ingredients:

 

1 1/2 cups flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1/3 cup cocoa powder
1/2 cup oil
1 cup water
1 teaspoon vanilla
1 tablespoon vinegar

 

Directions:

 

Mix all ingredients together until well blended. Place batter in cupcake cups until 3/4 full. Bake at 350F for approximately 20 minutes or until baked through. Frost with your favorite icing.

 

No Frost Cupcakes

 

Ingredients:

 

*These cupcakes are so creamy they don't require any frosting. Perfect for transporting to picnics and potlucks!

1 package chocolate cake mix
1 8 ounce package cream cheese
1 egg (lightly beaten)
1/3 cup sugar
1 cup chocolate chips

 

Directions:

 

Prepare cake mix according to package instructions and set aside.In a seperate bowl beat cream cheese, egg and sugar until smooth. Gently fold in chocolate chips into cream cheese mixture. Fill cupcake liners 1/2 full of prepared cake batter. Then spoon cream cheese/chocolate chip mixture over top. Cupcake liners should be 3/4 full. Bake at 350F for approximately 20 minutes or until baked through.
